Sneak in Vegetables for a healthy eating diet
I rembember as a kid having my no broccoli moment and my Mom demanding that I eat every morsal of it before leaving the table. It can be a hassel now with my own kids getting them to eat the dreaded spinach, beets or whatever the choice of vegetable is for that day. A heallthy eating diet is necessary to aid in the growing of healthy children. For Women First Magazine came out with an article that spoke about the innovative ways of getting children to eat their vegetables. The expert and author of the book Sneaky fitness: Fun, the fool proof ways to slip fitness into your child’s everyday life, Missy Chase Lupine has some great ideas to get your kids eating their vegetable.
Using her Kitchen Aid 3-cup Chef’s Chopper to create vegetable puree and these were added to dishes like pizza, brownies and mac and cheese were and turned out to be of great success. Her own children that had issues eating their vegetables were now getting their daily recommended values with this healthy eating diet. It is convenient to keep the puree in proportioned baggies in the fridge, Missy advise. This way they are right on hand when needed.
I think this is a great way of taking the pressure off parents when it comes to getting children to eat their vegetables, this way mealtime can be calmer and everyone is healthy and happy.
Here is an example for getting antioxidant and calcium in the diet
Purple Puree
3 cups rinsed raw baby spinach
11/2 fresh or frozen blueberries
no syrup or sugar added
1/2 tsp lemon juice
2tbsp water
Mix Into: chocolate cake or brownie batrer, burger meat and other dark colored foods
Orange Puree
1 medium sweet potato or yam peeled, chopped and boiled soft
3 medium to large carrots, peeled, sliced and boiled soft
Mix into: Mac and cheese, pasta and pizza sauce, tomato soup, and other red or orange foods.
Lunch-Box Mac ‘n’ Cheese Muffins
4 Large eggs
1 cup Orange Puree
2 cups of cooked macaroni
2 cups shredded low fat-fat colby or Cheddar chesee,divided
Salt and freshly ground pepper
Heat over ton 350 F. Line a muffin tin with paper liners; spray with oil. In a mixing bowl, whisk together eggs and puree. Mix in macaroni, 1 1/2 cups cheese, and salt and pepper to taste. Divide evenly among the muffin cups; top with remaining cheese. Bake 20 to 22 min., or until lightly browned and bubbly on top. These healthy snacks for kids can be placed in lunch boxes or have at snack time.
